Please note: The bird will be gutted but with giblets left in.

Cooking note: As with any Christmas bird, lots and lots of rich trimmings are the key to a successful roast capon. Roast nuts, butter-cooked vegetables, cranberry sauce, bread sauce and fried bread, wine gravy, goose fat roast potatoes, homemade sausage stuffing and all the rest. Cook covered until the last 20 to 30 minutes for added moisture and baste regularly for golden skin.
