Capons are 'unmanned' roosters, which (thanks to their lower hormone production) double in size, become far more tender and have a less gamey flavour than the average chicken. We source our free range birds from France, where they have lived in the best possible conditions to ensure you get the best meat that money can buy. This is a great, more moist alternative to another turkey Christmas - much easier to fit in your oven too.
As with any Christmas bird, lots and lots of rich trimmings are the key to a successful roast capon. Roast nuts, butter-cooked vegetables, cranberry sauce, bread sauce and fried bread, wine gravy, goose fat roast potatoes, homemade sausage stuffing and all the rest. Cook covered until the last 20 to 30 minutes for added moisture and baste regularly for a golden skin.
