Goose Foie Gras Terrine, 200g
Goose foie gras is notoriously hard to find these days and it commands a much higher price than duck foie gras. The flavour is much more subtle not quite as rich. Simply take it out of the fridge, put the terrine in a baking tray of boiling water for five seconds and release it from the pack onto your serving plate. We suggest serving it on toasted brioche with Tokaji wine or fig jelly.
