Pecorino is a fantastic hard cheese, made from sheep’s milk and goes beautifully with quince jelly and crackers. Made using traditional methods in the Tuscan region of Maremma, this is a well balanced, flavoursome cheese with a salty tang and slightly creamy consistency. Nutty, buttery flavours linger with a hint of fresh herbs.
