Our selection for the finest beef includes the choicest cuts from the highly prized Japanese wagyu cattle breed, now directly from Japan as well as from Chile and Australia. The secret of wagyu is the distribution of fat, which melts at low temperature to give a wonderful taste and texture.
We also have generous cuts from the finest beef the United States Department of Agriculture (USDA) has to offer – raised on the Central and Western plains of America. Not only are they an impressive size, they are also succulent and have a distinctive flavor and great texture.
What makes our beef delicious
Marbling is the secret to great tasting beef that is a joy to eat. Waygu is classified with a Beef Marble Score (BMS) from four to 11, along with a letter from A to C and a number from one to five, with A5 being the highest quality you can find.
For our USDA selection, the ‘prime’ grading is amongst the top 2% produced in America and, as a result, it’s difficult to obtain anywhere outside the USA.
Choosing the right beef for you
