Monte Enebro, +/-600g
A firm favourite in the cheese world, Monte Enebro is a Spanish goat’s cheese, which is made with the same pencillum (mould), as Roquefort - the famous French blue cheese. However, the mould on the Monte Enebro is on the outside of the cheese, rather than the typical blue veins that sometimes run through the inner of the cheese.
The inside of the Monte Enebro cheese initially has a chalky white paste texture, and then breaks down to become more runny, with a translucent appearance, over time. The flavour of the cheese has an undertone of herby and earthy mushroom.
We recommend trying this cheese with your favourite cracker, and a drizzle of truffle honey to compliment.
