Quadrello di bufala is a beautiful Italian soft cheese that is made with whole pasteurized buffalo milk and shaped into a square. It is deliciously creamy and slightly elastic in texture. Quadrello di bufala has a sweet and slightly acidic flavour with a strong earthy aroma. Its rind is washed during its aging process and is pale orange with a few occasional white patches of mould. While this cheese would go very well with a glass of wine, it pairs perfectly with ciders and ales.
