Red Miso Paste, 400g
Red miso paste is made from fermented bean paste. It is a staple in the Japanese diet due to its numerous health benefits and delicious umami flavour that complements an array of other flavours. Red miso has a slightly more subtle taste than white miso, therefore a little more can be used when you are making a miso soup. Add around four teaspoons of paste to dashi, a Japanese fish stock, then add your desired ingredients to make a delicious noodle soup – try adding soba noodles, enoki mushrooms, and prawns.
Alternatively, miso paste is famously used as a base to make sweet and sticky glazes: drizzle onto vegetables that really soak up flavours such as aubergine, or even on chicken or fish skewers with sesame seeds scattered on top.
