Smooth Black Truffle, Fresh
The smooth black truffle, also known as tuber macrosporum, is well known for its distinctive, aromatic flavour. It has a strong, garlicky taste and like the white truffle, is rare and difficult to find. The flesh is purplish-brown with thin white veins running through the truffle - when you cut into it you can see how cool it looks. This truffle is becoming ever more popular amongst restaurants chefs and passionate home-cooks. Try shaving it over pasta, risotto or on toasted bread with a generous drizzle of extra virgin olive oil.
How to clean and keep fresh truffles
The truffles we deliver are so fresh, they may still have a fine covering of soil or sand from when they were first unearthed. Washing them under a cold tap for a few seconds, then drying them gently, won’t affect the truffle’s flavour.
We advise to consume our fresh truffles within 3 days of receiving.
Once they have been gently cleaned, wrap each truffle individually in a fresh sheet of kitchen paper towel. Place the wrapped truffles in a clean, airtight plastic or glass container, such as a flip-top jar with a tight seal.
Change the paper towel every morning and re-wrap the truffles. Put them back in their container and refrigerate, repeating the process until you are ready to use them.
We suggest keeping fresh truffles in the coolest part of the fridge, ideally at 1 to 2°C, but be careful not to freeze them!
