White Coco de Paimpol Beans, 1kg
French white coco beans, not to be confused with cocoa beans, aren’t the prettiest bean to look at but the scuffed yellow pod gives way to a row of elegant white beans that are quite unlike any other legumes.
Traditionally the coco bean has been used in the French classic, cassoulet, a unctuous and comforting dish of beans with pork and confit duck. Officially known as Coco de Paimpol, these beans are a variety of haricot that is semi-dry, which means that there’s no need to soak them in before cooking. Simmer gently in water with some sautéed onion and garlic, a bouquet garni and a chunky ham bone. The result is a meltingly tender bean with a fragrant, nutty taste.
