Grouse are wild and therefore unpredictable in terms of numbers. They have a very strong gamey flavour and are a very important part of the culinary calendar. They are excellent larded with bacon and roasted for about 12 minutes in a hot oven. Serve with bread sauce, game chips and red wine jus. For a decadent treat, sit the cooked grouse on top of a piece of fried bread to absorb up all the delicious juices.
