Yellow leg Chanterelles, also known as Girolles in Italian cuisine, are mushrooms that are prized among culinary enthusiasts. Cooking & Serving Suggestions

  • Sautéing: Heat a skillet pan over medium-high heat, add butter or olive oil and sauté sliced chanterelles until they are golden brown and tender. Season with salt, pepper and fresh herbs like thyme or rosemary.
  • Roasting: Toss whole or sliced chanterelles with olive oil, garlic and herbs, then spread them out on a baking sheet. Roast in a preheated oven at 400°F (200°C) for about 15-20 minutes or until they are golden brown and caramelised.
  • Grilling: Grilling yellow leg chanterelles adds a smoky flavour and enhances their meaty texture. Brush whole or sliced chanterelles with olive oil and season with salt and pepper. Grill them over medium-high heat for a few minutes on each side, until they are tender and slightly charred.
  • Creamy Sauce: Yellow leg chanterelles are delicious in creamy sauces and gravies. Use them in dishes like pasta with cream sauce, mushroom risotto or as a topping for grilled chicken or steak.
  • Soup: Add sliced yellow leg chanterelles to soups and stews for a rich and earthy flavour. They pair well with hearty vegetables like potatoes, carrots, and leeks.
