30 mini brioche buns
- 1 teaspoon medium hot curry powder
- 3 tablespoons mayonnaise
- 1 teaspoon mango chutney
- A squeeze of lime juice
- 3 eggs
- 2 tablespoons mayonnaise
- ½ teaspoon malt vinegar
Cress or micro herbs
- Chicken

Combine the chicken with the curry powder, mayonnaise, mango chutney and lime juice. Mix well, season and set aside.
Cook the eggs in boiling water for 6 minutes, then plunge them into a bowl of cold water. Once cool enough to handle, peel them and mash with a fork. Combine with the mayonnaise, vinegar and some salt and pepper.
Split the buns and fill them, topping the egg mayonnaise filling with the cress or herbs.
