Coronation lobster is a gorgeous sandwich filling for a picnic! Inspired by Coronation chicken, it has sweetness from mango chutney, spice from chilli powder and curry powder, and an allium bite from chives. This recipe is made easy with our pre-cooked lobster knuckle and claw meat, then just fill sweet brioche buns to the brim with this tasty filling and wrap carefully to take on your picnic.
Ingredients

2 brioche rolls

200g cooked lobster claw and knuckle meat, defrosted

50g mayonnaise

50g crème fraiche

1 teaspoon curry powder

½ teaspoon smoked paprika

½ teaspoon chilli powder

½ teaspoon ground cumin

¼ teaspoon ground cinnamon

1 tablespoon mango chutney

8 dried apricots, small diced

10g chives, finely chopped, plus extra for garnish

Salt, to season
Directions
Prepare the rolls: With a bread knife, slice the rolls down the middle. Press inside to make space for the filling.
Make the filling: Chop the lobster meat into small pieces. Stir together all of the Coronation lobster ingredients in a bowl. Taste for seasoning and adjust to your taste if necessary.
Fill the lobster rolls: With the Coronation lobster filling. Finish garnishing with the extra chives.
