Earl Grey and Bergamot Martini

Jazz up your cocktail repertoire with this stunning martini! The addition of aromatic bergamot adds a fun seasonal twist and punchy flavour. Note: the ingredients listed is the amount to make 1 martini, scale up to make more.
Ingredients
- 50ml gin
- 50ml strong earl grey tea

10ml fresh bergamot juice

25ml fresh lemon juice
- 15ml sugar syrup
- 1 egg white
- Sugar, to rim glass
- Bergamot peel to garnish

Edible flowers to garnish
- Ice
Directions
Step 1, For the sugar syrup, combine 300g sugar with 100ml cold water (scale up or down using a 3:1 ratio, but you will only need 15ml of syrup for each cocktail) and gently simmer until all the sugar has dissolved and the liquid is clear. Set aside to cool.
Step 2, Prepare the earl grey tea. We used 2 tea bags for 100ml of boiling water (this will be enough for two cocktails). Set aside to cool.
Step 3, Juice the lemon and bergamot. Shave a sliver of bergamot peel and twist to add as a garnish. Use the leftover juice to rim the martini glass before coating in sugar.
Step 4, Add ice to the cocktail shaker with all the ingredients and shake vigorously for about one minute or until a silky foam has formed. Pour into the martini glass and garnish with the bergamot peel and edible flowers.
