A light, quick and easy tapas dish, gambas pil pil is prawns tossed in rich butter and peppery olive oil, with loads of fragrant garlic. These enormous, meaty tiger prawns are sweet and tender when popped out of their shells. Make sure you serve with bread to dip into the butter!
Ingredients

Tiger prawns, defrosted

40g unsalted butter

6 cloves garlic, grated

Zest of one lemon

Drizzle high quality olive oil

Pinch chilli flakes

Pinch flaky sea salt
Directions
Melt the butter: In a pan over high heat, with the grated garlic cloves and the lemon zest until foaming.
Add the tiger prawns: Into the pan. Cook for 2.5 minutes on one side and 2.5 minutes on the other, until the prawns are pink.
Add the final ingredients: The chilli flakes, the sea salt and the last drizzle of high quality olive oil.
Serve the tiger prawns: On a plate and pour the melted butter over the top.
