300g Hiramasa Loin
- 3 tablespoons lime juice
- Flesh of 1 grapefruit finely chopped
- Juice of half a grapefruit
- A large pinch of chilli flakes

- 1 teaspoon sesame seeds
- 1 teaspoon sesame oil
- 3 spring onions finely sliced

Method
Remove the skin from the fish and slice diagonally.
Combine the lime juice, grapefruit flesh and juice, chilli flakes, soy and sesame oil and whisk.
Arrange the fish on a plate, pour the dressing over and top with the sesame seeds and spring onions. Finish with the apple blossom.
