Ingredients
150g Banana puree
- 3 tsp Matcha tea
- 1l Pineapple juice
2-3 Kumquats
- 200ml Black vodka
- 2 tsp Cane sugar
4-5 Kaffir lime leaves

Slice the ripe kumquots sideways into small slices.
Add the crushed ice, matcha powder, pineapple juice, banana puree and vodka to a cocktail shaker and shake well.
Wedge a kumquat slice onto the rim of the glass and rub around the whole rim.
Sprinkle a little sugar around the rim of the glass (the kumquat juice will help the sugar to stick a little better).
Garnish with a kaffir lime leaf.
Step Stir gently and serve.
