Mini Lobster Rolls

Ingredients

  • 400g cooked lobster, defrosted and shelled

  • 1 small celery stalk
  • 20g truffle mayonnaise

  • 1 tsp minced chives

  • 1 tsp lemon juice

  • 1 tsp lemon zest
  • 8 mini hot dog buns for canapes

  • 1 tbsp butter

  • A handful of garlic chives micro herb

  • Salt & pepper

    1. Rinse the lobster meat thoroughly, checking for any loose shells, and drain well to avoid watering down the mayo mixture. Chop or tear the meat into large chunks, then set aside.

    2. Make the truffle mayo mix: In a large bowl, combine the celery, truffle mayonnaise, chives, lemon juice, lemon zest, salt and pepper. Adjust seasoning to taste.

    3. In a medium frying pan over medium heat, melt the butter. Add the lobster meat and cook for 2 minutes, stirring gently until warmed through and coated with butter. Transfer the lobster meat to the mayo mixture using a slotted spoon and toss to coat evenly. Discard the butter and any liquid left in the skillet.

    4. Toast the mini brioche rolls with the remaining butter, cut side down, for about 2 minutes on each side until golden and crisp.

    5. Fill each toasted roll generously with the truffle mayo lobster mixture. Garnish with garlic chives micro herb, if desired, and serve immediately.
