2kg mussels
1 carrot
2 tbsp butter
A handful of parsley
- 3 garlic cloves
- 1 shallot
- 50cl single cream
125g blue cheese
- 25cl white wine

Prepare the mussels: Clean the mussels by scraping them under a trickle of water. Discard any that have already opened.
Cook the base: Into a large casserole dish, heat 2 tbsp of butter, then add chopped parsley, carrots, shallots and garlic and cook over medium heat for about 5 minutes.
Steam the mussels: Add the white wine and cook for 3 minutes more.
Make the sauce: Pour the mussels, cream and the crumbled blue cheese to the mussels and stir. Cover the pot and simmer over a low heat for 5 to 10 minutes.
Combine and serve: Serve the mussels with the sauce and some garlic bread.
