Popcorn Shoot and Tiger Prawn Salad

Popcorn shoots are one of our favourite ingredients: not only do they add a flash of sunshine yellow to dishes, they taste like sweetcorn! They make a great addition to salads and partner well with seafood and light meat such as chicken.

6 tiger prawns
- 30g popcorn shoots
- 2 tablespoons lime juice
- 1 red chilli finely chopped
- 2 tablespoons olive oil
- 1 teaspoon honey
- Small handful coriander leaves

- Step 1, Cook the tiger prawns in salted boiling water for around 3 minutes, or until they are totally pink. Refresh under cold water and set aside.
- Step 2, Combine the lime juice, finely chopped chilli, olive oil, honey and some salt in a clean lidded jar or bowl and shake or whisk to combine.
- Step 3, Divide the prawns and popcorn shoots between two plates and top with the dressing and coriander.
