Mahi-mahi is a white fish that’s great for grilling thanks to its large flakes and firm texture. We love to cook it in a sweet and salty teriyaki marinade, which caramelises under the grill and is the perfect partner to a bowl of fluffy rice. Try serving it with some asparagus dressed with sesame oil.

- Step 1, Combine all the sauce ingredients and mix well, then tip half of the marinade over the mahi-mahi, turning to coat.
- Step 2, Preheat a grill to medium and cook the mahi-mahi for around 8 minutes, taking care not to burn it. Cooking time will depend on the thickness of the fillets. Brush with the remaining marinade occasionally.
- Step 3, Serve the mahi-mahi with some rice and seasonal green vegetables, such as asparagus.
