This elevated pigs-in-blanket recipe takes juicy Italian sausages, wraps them in high quality smoked streaky bacon and finishes them with crispy sage leaves and a chilli maple glaze. They're a favourite item on most Christmas dinner tables, but our ones might be the very best you've ever tried.
Ingredients

1kg Italian Pork Sausages

500g high quality streaky bacon (we’d recommend Iberico bacon)

75ml maple syrup

½ teaspoon chilli flakes

Sage leaves & a drizzle of olive oil, to garnish
Directions
Preheat the oven: to 200°C
Prepare the sausages: Wrap each of the sausages in a slice of bacon.
Roast the sausages: Roast for 18 mins
Add the syrup: Remove from the oven, drain off any excess fat, drizzle over the maple syrup and add the chilli flakes chilli flakes. Shake the tray to fully coat the sausages, the roast for another 7 minutes.
Make the crispy sage garnish: Heat some oil in a pan and add sage leaves. Leave untouched over low heat for 3 mins, or until the sage leaves smell herbal and feel crispy. Leave them aside on a plate to cool and finish crisping.
Serve the pigs-in-blankets with the crispy sage leaves as a garnish.
