Our Manchego cheese is 3-6 months matured and comes in a 3kg wheel. This is an artisan cheese made with raw Manchega sheep's milk. It is produced in La Mancha and carries the the D.O. (Denomination of Origin).
Due to Manchego being made from the sheep's milk, it has several distinct characteristics which separate it from similarly brined cow's milk cheeses. Manchego tends to have a much more assertive bite and has a hint of herbs and plants.
Our favourite recipe to use Manchego in is a Spanish take on macaroni cheese, grated into the sauce and ontop, along with roasted red peppers and chorizo pieces.
