Ice lettuce is a very unique succulent with fresh, crisp leaves that are covered in ice-like beads. It’s very refreshing and perfect for combining with seafood and sweet fruit like mango on a hot summer day.

  1. Cook the prawns in salted boiling water for 3 minutes, or until totally pink. Refresh under cold water (you can peel the prawns and remove the digestive tract before serving, or leave some whole for presentation).
  2. Combine the chilli, lemon juice, olive oil, honey and mint in a bowl or a clean lidded jar and whisk or shake to combine.
  3. Arrange the prawns, mango and ice lettuce on two plates and pour over the dressing.
