An interesting twist on the classic Piña Colada, this Matcha Cocktail is an uplifting show-stopper at any cocktail party, as well as a rather alternative way of saying goodbye to a Dry January (for all those who successfully practised it). With an energising and vibrant Matcha boost, this refreshing cocktail offers a bold, earthy flavour to balance out the sweetness of the fresh pineapple juice. Not only does it get your guests' taste buds talking, but this Matcha Colada is by no means tricky to make.
Ingredients

150g Banana puree
- 3 tsp Matcha tea
- 1l Pineapple juice

2-3 Kumquats
- 200ml Black vodka
- 2 tsp Cane sugar

4-5 Kaffir lime leaves
Directions
Method
- Step 1, Slice the ripe kumquots sideways into small slices.
- Step 2, Add the crushed ice, matcha powder, pineapple juice, banana puree and vodka to a cocktail shaker and shake well.
- Step 3, Wedge a kumquot slice onto the rim of the glass and rub around the whole rim.
- Step 4, Sprinkle a little sugar around the rim of the glass (the kumquot juice will help the sugar to stick a little better).
- Step 5, Garnish with a kaffir lime leaf.
- Step 6, Stir gently and serve.
