Pea Shoot, Mint and Walnut Dip

This dip is full of the fresh flavours of spring. Pea shoots are great as a garnish, but you can also use them in dips and pesto to add a hit of pea flavour. We like to serve this spread on sourdough toast, for a light lunch, starter or picnic dish.

  1. Reserve a few pea shoots for garnish, then place all the ingredients into a blender and pulse to a paste, seasoning with salt.
  2. Serve with toasted sourdough or crackers.
