Prep Time

5 minutes

Fresh, light and ready in just a few minutes, this salmon tartare recipe combines finely diced raw salmon with cucumber, spring onion, dill, cornichons and capers. A squeeze of lemon and a few drops of Tabasco add acidity and gentle heat, creating a refreshing starter with plenty of flavour and texture.

The key to an excellent salmon tartare is using high-quality sashimi grade salmon suitable for eating raw. Because there is no cooking involved, the quality and freshness of the fish remain at the heart of the finished dish.

Served simply with crisp toast, this tartare makes an elegant starter or light lunch. You can also adapt the flavours with different soft herbs or give the salmon tartare a Japanese twist with ingredients such as wasabi, sesame oil and lime.

Ingredients

  • 180g sashimi grade salmon
  • A squeeze of lemon juice
  • 1/2 baby cucumber, diced
  • 1 spring onion, finely sliced
  • 1 tablespoon dill, finely chopped
  • A few shakes Tabasco or other hot sauce
  • 2 cornichons, finely chopped
  • 2 teaspoons capers, chopped
  • Toast to serve

Directions

    Method

    1. Step 1, Cut the sashimi grade salmon into small, even dice, keeping the pieces relatively uniform so the tartare has a consistent texture.
    2. Step 2, Combine the diced salmon with the cucumber, spring onion, dill, finely chopped cornichons and capers, mixing gently so the ingredients are evenly distributed without breaking up the salmon.
    3. Step 3, Add a few shakes of Tabasco, a squeeze of fresh lemon juice and salt and freshly ground black pepper to taste. Mix everything together and check the seasoning, adding a little more lemon or hot sauce if required.
    4. Step 4, Serve the salmon tartare immediately with crisp toast alongside.
