Grilled Tiger Prawns with Seaweed Butter

This is a perfect example of how simple it can be to cook a fantastic meal when you have really good ingredients. Whole tiger prawns are split and grilled quickly in seaweed butter, which adds richness and a salty umami flavour.
Serve with plenty of bread for mopping up all that melted butter!
- Lay each prawn on its back and use a sharp knife to split lengthways, and flatten so that they are butterflied.
- Dot with plenty of the seaweed butter and place in a dish under a hot grill for a few minutes, or until cooked through.
- Serve with the bread and lemon wedges.
