Maldon Oysters, Fresh, x 25
Maldon oysters can filter up to five litres of fresh sea water every hour. This process gives them a sweet, yet meaty taste and also boasts a citrus and cucumber aftertaste.
These wild oysters are collected on the River Blackwater in Essex. They are smaller and rounder than their rock oyster cousins, but their flavour and texture is considered far superior. Super fresh and saline-rich in flavour, they only need a simple shallot vinegar to serve.
