Premium Oscietra caviar comes from the Siberian sturgeon (Acipenser baerii), a highly prized species known for its refined roe. This sturgeon can exceed 60–65 kg (132–143 lbs) at full maturity and has an impressive lifespan of up to 50–60 years. Female sturgeon typically require 6 to 8 years for their eggs to fully mature, a slow and careful process that contributes to the exceptional quality of the caviar. The eggs measure approximately 2 mm to 3 mm in diameter and display an elegant dark grey to deep black hue.
