Wookey Hole Cave-Aged Cheddar, Half-Wheel, +/-300g

This truckle of cave-aged cheddar is hand-made on the Ashley Chase Estate in Somerset, from the milk of the estate’s own cows. The location of its’ production gives it the status of West Country Farmhouse Cheddar. If you’re looking for an authentic English cheddar, this one is sure to impress. The care that goes into hand-making the cheese at every stage (cutting, stacking and turning of the curds), can be tasted in the flavour of the cheese. When the cheese has been encased in the outer cloth, it is left to mature in the Wookey Hole Caves, famous for its’ delicious cheddars. The flavour of this cave aged cheddar is fruity and tangy with a sweet undertone that balances the earthiness. The marbled outer casing makes it the perfect truckle to have as a centrepiece on your cheeseboard. Serve with crackers and a chutney of your choice!
