Yuzu Zest, from Frozen, 100g

Yuzu is the lesser known of the citrus fruits. It is prized for its aromatic zest and uniquely fragrant juice. It can also be referred to as Japanese Citron. Yuzu is very similar to a lemon but has a much more tart flavour. Its zest is packed with delicious oils and offers a beautifully fragrant touch to any dish requiring a little citrus flair. Add a little of this zest to your tuna tartar and serve on a crostini with a few slices of avocado.
