Potatoes and truffle are a match made in heaven, so why not up your potato salad game this summer?
Ingredients
- 1 kg new potatoes, such as Jersey Royals
- 50g mayonnaise
- 3 tablespoons finely chopped chives
- Truffle dust
- Summer truffle
Method
- Cook the potatoes in boiling salted water.
- Combine with the mayonnaise and chives and season with more salt (if needed) and pepper.
- Stir in some of the truffle dust and top with plenty of shaved summer truffle.
