Red snapper is one of the most popular white fish for its firm texture and a sweet, nutty taste that lends itself well to a variety of dishes. It is often found in warm waters, such as the Gulf of Mexico. Red snapper pairs well with many flavours from hot chillies to fragrant fresh herbs. Try marinating for several hours in a mixture of ginger, chilli, coriander, and soy sauce before grilling on a hot barbeque. Serve with greens such as teriyaki bok choi.
