Skate Wings, Fresh, 2 x 450-550g
Skate is an underrated fish that can work well with delicate or strong flavours, and be prepared in a variety of ways. Try making this classic skate wing dish with a beurre noisette and caper sauce. First preheat the oven. Season the skate wings and fry in hot oil on both sides for colour before finishing in the oven. When you take the skate wings out the pan to rest, put the pan back on the heat, and add a good knob of butter. Let the butter foam and start turning black. Then add a squeeze of lemon, and 15 capers, let all the juices combine, season then pour the liquid over the fish.
