Unagi or freshwater eel, is very popular in Japan. It is a common ingredient in Japanese cuisine, known for its bold, rich flavour. This method of preparation involves the eel being split down the back, gutted and boned, and then dipped in a sweet soy sauce, before being grilled or broiled. Use this eel to make sushi such as unakyu or unadon.
