Halibut are the largest flatfish of all and have been known to weigh over 300kg. They have wonderful, succulent white flesh and a beautifully delicate flavour. Try roasting halibut on the bone and serve it with a clam and tomato risotto, flavoured with fish stock and finished with home made pesto. Garnish with buttered crevettes grises.
NB: Please note that the weight is for the whole fish; once the fish has been scaled and gutted, the delivered weight will be 15% less than the whole fish weight.
