This Ponzu sauce is made using exclusively high-quality yuzu, with the addition of shiitake mushrooms and kombu seaweed to give it an extra umami flavour.
The sauce was produced by Marusho's Vinegar Brewery, located at the base of the Kumano mountains in Wakayama, Japan. Family-owned and operated for four generations, the brewery holds giant cedarwood barrels where fermentation takes place for sauces and bottles of vinegar, some over 100 years old.
