We're really excited about the recent launch of the speciality prawn section on our website. Working with our dedicated supplier we have put together a stonking selection of prawns, shrimp and langoustine, even if we do say so ourselves! And better still, there's more to come so watch this space. In the meantime though take a look below for a glimpse at some of the beauties we now have on offer. Each of them different from the next and all of them wild, sustainably fished and top quality. Why frozen? When the prawns are flash frozen at sea within hours of being caught, they have no chance to degrade in quality and freshness. So when you defrost and cook them at home that freshness remains and they taste as good as if they'd just been caught. All prawns are a variation on a theme but each offers something a little different, so here's the lowdown on a few of our favourites, new and old. Jumbo tiger prawns Big, juicy, meaty prawns - that's the best way to describe these beauties. Monsters of the prawn world, they weigh in at a mighty 200-400g each and are a meal in themselves. Jumbo tigers are fantastic on the barbeque and will practically take you to heaven and back in the first bite. Buy jumbo tiger prawns here Wild carabineros prawns Eye catching carabineros are vibrant red, even when raw. They're quite something to behold and the distinctive colour and size earn them coveted status in the culinary world. Wow guests with a carabineros dish and you're bound to cause a stir, not least because of their rich and robust flavour. They're a great conversation starter, too - did you know they take their name from the Spanish police who's uniform is also bright red? Buy carabineros prawns here Wild Argentinian prawns Pretty in pink, these Argentinian prawns taste just as good as they look. With 15-20 in a kilo they are a substantial prawn, with plenty of meat hidden within the shell. The delicate flesh needs only a flash in the pan or under a grill to make the most of its sweet, buttery flavour with just a hint of nuttiness. Buy wild Argentinian prawns here Gambero rosso prawns Deep water gambero rosso are meltingly soft with super sweet, delicate flesh. With a fishing depth of 1,000 metres you won't be surprised to learn they are a delicacy that doesn't grace supermarket shelves. Try tossed in a light dish of garlic and herb linguine, rather than overpowered by a rich risotto. They have a flavour you won't forget in a hurry. Buy gambero rosso prawns here Jumbo wild spot prawns Of all the new prawns to hit our shelves recently, the wild spot are perhaps some of the most special. Their delicate, sweet and buttery flavour is in part down to the icy Alaskan waters where they live in the wild - this adds a real depth of character to the prawn and gives it a lovely firm texture. If you're looking for something with a little je ne sais quoi, then this is the prawn for you. Buy jumbo wild spot prawns here Wild Spencer Gulf prawns A mix of warm waters and cooler currents in Australia's Spencer Gulf gives a complexity and depth of flavour to these pale prawns. The gulf is managed by just one fishery, which is forging the way in sustainable fishing practices and brings these excellent prawns ashore already flash frozen to -40¬∞C as soon as they are caught. Buy wild Spencer Gulf prawns here Mantis shrimp This is a sneak preview of a fabulous prawn, soon to be available over at finefoodspecialist.co.uk. More akin to lobster than shrimp despite its name, the mantis shrimp has a hard shell that needs to be cracked to reveal its firm flesh. Watch this space because this one is going to be a good'un! Mantis shrimp coming soon Wild langoustine tails Langoustine's reputation as one of the kings of the shellfish world is well known. What makes this new addition to our range so special though is not only its sublime flavour, but the fact that you can buy just the edible tail rather than the head and claw end, saving yourself time and money.
