The combination of crisp greens, tender tiger prawns, fresh mango and chilli creates a bright prawn and mango salad that feels both refreshing and indulgent. Ingredients
4-6 tiger prawns
120g ice lettuce
- 1 mango, peeled and diced
1 handful mint leaves, finely sliced
- 1 red chilli, finely chopped
2 tablespoons lemon juice
3 tablespoons olive oil
- 1 teaspoon honey
Directions
Cook the prawns in salted boiling water for 3 minutes, or until totally pink. Refresh under cold water (you can peel the prawns and remove the digestive tract before serving, or leave some whole for presentation).
Combine the chilli, lemon juice, olive oil, honey and mint in a bowl or a clean lidded jar and whisk or shake to combine.
Arrange the prawns, mango and ice lettuce on two plates and pour over the dressing.
