Ingredients
4 mango and lamb burgers
4 brioche buns
Finely sliced red cabbage
2 spring onions, sliced into thin strips
1 small handful mint leaves, finely chopped
1 small handful coriander leaves, finely chopped
A squeeze of lime juice
A splash of olive oil
Directions
Heat a BBQ or frying pan and cook the lamb burgers for around 5 minutes per side, or until just cooked through.
Combine the chopped herbs with some lime juice, olive oil and salt and pepper and set aside. The sauce should be runny enough to make a sort of ‘sauce’ for the burgers.
Toast the buns and layer them up with some of the red cabbage, spring onions, the burgers and the herb sauce. Serve immediately.
