Gildas are a small tapas where several complimentary ingredients are skewered together. Here we have used our peppery Padron peppers, blowtorched until charred, with salty Manchego cheese and vibrant quick pickled tomatoes.
Ingredients

12 Padron Peppers

Drizzle high quality olive oil

Pinch flaky sea salt

6 tomatoes, quartered, seeds scraped out

200ml apple cider vinegar

30ml tap water

25g white sugar

Pinch salt

250g Manchego, cubed
Directions
Make the quick pickled tomatoes: By heating the vinegar, the water, the sugar and salt in a small pan until simmering. Pour over the prepared tomatoes in a jar or bowl and leave to cool completely.
Blowtorch the Padron peppers: After drizzling them with olive oil and sprinkling them generously with flaky sea salt.
Build the gildas: By skewering the peppers, a cube of the cheese, then a few chunks of the pickled tomatoes onto skewers.
