Brill Fillets, Fresh, From a 1-2kg Fish

Brill are found in waters from Iceland through to the Mediterranean and Black Sea. They feed on crustaceans and small fish living near the seabed. Similar to turbot, brill has a succulent,slightly sweet flesh and benefits from being easier to prepare and a little less expensive than its illustrious cousin. Brill pairs very well with wild mushroomsand is stunning with ceps and a rich beurre blanc sauce.
