Finger Limes, 100g

Finger limes are the latest craze to hit the Michelin starred kitchens. They are prized by chefs because the interior pulp has a caviar-like appearance, which is perfect for seafood garnishes. They have a tangy lemon flavour and the texture of the delicate little pearls is such that they pop on the roof of the mouth, releasing sharp juice. Finger limes come in different colour shades varying from green to yellow to purple. They are hard to come by and originate from Australia.
