The tomatillo is one of Mexico’s most popular ingredients. The green papery outer layer, sometimes known as the ‘husk’, protects the green looking tomato fruit underneath. Generally, tomatillos are cooked, as this sweetens them as they are very tart in flavour when eaten raw. Tomatillos are used in the famous sauce ‘salsa verde’ as their citrus flavour adds a zesty flavour. To cook them, their stone must first be removed from the middle of the fruit, and then they can be roasted, boiled or fried.
