Pedro Domecq 40-52 Month Jamon 100% Iberico Bellota, +/-7.5kg

This rich and distinctive ham will create a lasting memory. Produced in Jabugo in southern Spain, this 100% Iberico bellota ham is cured for an astonishing 40-52 months. The regulatory minimum curing period is 24 months and this substantial increase, coupled with 120 days of acorn feed, makes for an intensely-flavoured and stunning ham. The lampiño pigs that the Juan Pedro Domecq family use in their production roam free for two years in the surrounding oak woods. The subsequent curing period follows traditional methods using an all-natural process, which is made possible by the ideal microclimate in the region. Put simply, this is possibly the best bellota ham you’ll ever try.

What Makes Iberico Bellota Ham Special?

Jamón Iberico Bellota is prized for the marbling of the meat and the depth of flavour developed through both the pigs’ diet and the curing process.

This ham is matured for 40–52 months, considerably longer than the regulatory minimum stated on the current product page. That additional ageing helps create a more concentrated flavour and complex aroma. Fine Food Specialist

The acorn-rich diet traditionally associated with Bellota production also contributes to the ham’s characteristic richness and texture.

How to Serve Whole Iberico Ham

Whole Iberico ham is best sliced very thinly so the fat can soften and the full flavour can develop.

Serve at room temperature as part of a charcuterie board, alongside good bread, olives and simple accompaniments. Avoid overpowering sauces or strongly flavoured condiments, as the long curing process already gives the ham considerable depth.

It also pairs beautifully with Spanish cheeses, particularly firm or mature varieties. Explore our Spanish Cheese collectionif you're building a larger sharing board.

A Traditional Ham from Jabugo

Jabugo is one of Spain’s most famous areas for Iberico ham production, with the local climate playing an important role in the traditional curing process.

The current product is matured using an all-natural curing process over 40–52 months, allowing the flavour and texture to develop gradually. Fine Food Specialist

Because this is supplied as a whole bone-in ham, it also makes an impressive centrepiece for events, celebrations and larger gatherings.

One thing I’d change from the current copy is the line saying this is “possibly the best bellota ham you’ll ever try”. I’d remove that absolute-style claim and let the 40–52 month cure, Jabugo provenance and 100% Iberico Bellota specification do the selling instead.
