Whole Lemon Sole, Fresh, 2 x 400/600g

Lemon sole is a wonderful British flat fish. Prime lemon soles are caught off the south coast from January to May. A fabulous clean, light fish perfect for a simple lunch. Dust them in flour and pan fry. Finish it with a black butter sauce and a squeeze of lemon juice and a touch of chopped parsley, and serve with creamy mashed potatoes and minted peas.
