Antarctic black cod is one of the most flavourful and tender fish around, thanks to the large amount of omega 3 it contains and the fact that the cooked fish naturally falls apart in large, soft flakes. It is a sub-ice dwelling fish, and travels such a long way to come here that it has to be bought frozen. This fish is amazing served European or Asian-style, and has become extremely popular cooked in a miso and sake marinade in many top restaurants.
Just try miso-glazed black cod yourself at home - the buttery flesh lends itself really well to sweet, salty and sticky flavours. Just add some fine vegetable noodles and soy, and you have a date-night meal to satisfy even the most finicky of diners.
