600g Inca tomatoes
300g datterini vine tomatoes
250g burrata
1 handful of basil
- Salt & pepper to taste
2 tbsp olive oil
- Drizzle of balsamic glaze
- Optional Dressing:
- 100ml olive oil
- 1 tsp of Dijon mustard
- 1 tsp of Hot English mustard
- 2 tbsp of red wine vinegar
- 2 ½ tbsp of honey
- 1 crushed garlic clove
- Salt and pepper to season

- Step 1, Wash the tomatoes thoroughly under running water and pat them dry.
- Step 2, Cut the tomatoes into quarters and place them in a salad bowl.
- Step 3, Tear the burrata into bite-sized pieces by hand and scatter them over the tomatoes.
- Step 4, Pick the basil leaves from the stems and add them to the bowl.
- Step 5, Gently mix everything together, ensuring the ingredients are evenly distributed.
- Step 6, Drizzle with olive oil and balsamic glaze, season with salt and pepper and serve immediately or use an optional dressing.
